Easy, most are high quality stainless steel, I use carbon in the kitchen, 52100 and W2, along with carbon damascus,see more in the kitchen knife thread. I usually simichrome lightly every once in a while. I really don't have much use for pocket knives, but I like carrying them. Most of my knives are used on meat, and all are hand sharpened on Shapton stones, no scratches.
