Not sure if you'd call these chef's knives but they are all BIG! Mostly unmarked and old.

I took these at my in laws the other day. Just a few better ones. They even have a used McDonald's walk in freezer in the basement. #2 is a knife steel. Most are badly worn. Bob

Here's some of mine.
Top right knife: KABAR
Cleaver left: Chinese
Cleaver right: Russell, tapered tang
Large chef knife: Dexter. Southbridge, Mass. My favorite knife.
Smaller chef knife: Nogent. Made in France.

Here are my two cleavers. My chef knives aren't worth the time.
The top cleaver is from "Evansville Tool Works."
The bottom cleaver is a "Cordon Bleu" from Japan.

Use that old girl. I use mine more and more, not just for Chopping Meat.
I use it for turning roasted potatoes into mashed potatoes , they excel at processing fresh garlic also.

This puppy is just shy of five pounds and nearly three feet long. I don't think any were ever made bigger than this and the only one I ever saw. It is available.

#1 A Colonial folding hunter/cleaver.
#2 the Klever Klever multi-tool.Cleaver;fish scaler;cap lifter;center opening is for opening metal screw caps I think.
#3 an unmakred German carving set with colored etching and carved stag handles.
#4Another multi-tool cleaver;fish scaler;bone saw.
#5 A pair of Cattaraugus cleavers.
#6 a large butcher knife marked Englishtown Crafts that has a raised flat area on top of the blade for batoning through bones.

CPM-3v cleaver made by Phil Dobson and heat treated by Peter Heat Treat, RC 61; HHH knives chef knife in Bjorgmantwist Damasteel, damascus bolster with Rosewood burl handles, copper pins and liners
