Here are some suggestions for you.
The cleaver on top is a Russell. High quality but not cheap.
Next is a 8" kitchen knife. You might like this size or search for a 10 or 12 inch model.
Next is a sturdy Chinese cleaver. Not expensive and decent quality.
Bottom is a no name inexpensive cleaver that can get the job done.

My favorite kitchen knife,
Dad gave me this Olsen filet knife we use it for everything. I filet the breast and thigh meat off pheasant. Then cut the pheasant or filet. As seen in the picture.

This aluminum handled one has no markings at all. Anyone have any insight? This large Dexter only earns it's keep come butchering season then back in the tub.

I was accumulating mini cleavers too and I ended up with about 8 of them along with a huge pile of kitchen knives. I had a mini cleaver from Japan and of all places one made in Holland. Then all of these kitchen knives started to pile up along with old tools, books (mostly copies of Catcher in the Rye,
SO, about two years ago, I had a huge yard sale and promptly found out that all of that stuff has turned out to be so much "junk" when you are hoping that others will want to take these items home from your sale.
*The infamous Lee Harvey Oswald, the man charged with JFK’s murder also had connections to this book. In a raid of his Dallas apartment following the assassination, a copy of Catcher in the Rye was found.

... out of hundreds and hundreds of DVD's I sold about $10 (10 for $1 each) worth.

We just do the Cutco - you know the drill, friends' college kid takes up selling them, now 20 years later we have a whole kitchen full of the stuff.

Case Kitchen, no Cutco here
Coming from Bradford I never got into the Cutco knife’s. I’ve gathered quite a few kitchen knife’s in a unique circumstance. My family bought a house from a guy who had a large quantity of Case kitchen knife’s. I saved the cream of the crop when we were filling the dumpster. Others made their way into a bucket, which I later scavenged. (I saved them — otherwise they would have ended up in the dumpster.)
This one is one of my favorites. I’ve got other single kitchen knives and sets with wall mounts too.

Here is the set I found with a wall mount for easy storage in your kitchen. It has a Case logo on the top. I’m not sure if this was a factory set or aftermarket.

L to R; Dexter, U.S. cutlery co., Wearever, Winchester, Dexter Harrington, Goodell, Ekco Flint, Comus(camillus), Goodell, Utica.
the honing steel is a newer Lamson Goodnow.
the wearever chef's knife is maybe the single greatest chunk of steel anybody ever put a handle on.
it's the first thing i'd save if my house was on fire.
