Welcome here, Vincer1986.
Here are some suggestions for you.
The cleaver on top is a Russell. High quality but not cheap.
Next is a 8" kitchen knife. You might like this size or search for a 10 or 12 inch model.
Next is a sturdy Chinese cleaver. Not expensive and decent quality.
Bottom is a no name inexpensive cleaver that can get the job done.

My favorite kitchen knife,
Dad gave me this Olsen filet knife we use it for everything. I filet the breast and thigh meat off pheasant. Then cut the pheasant or filet. As seen in the picture.

Every time I see a quality US made kitchen knife I pick it up and toss it into a tub.

This aluminum handled one has no markings at all. Anyone have any insight? This large Dexter only earns it's keep come butchering season then back in the tub.

An old butcher knife made in Sweden and one unmarked. Both with a heavy vinegar patina.

Got this at the thrift store 'cuz it's cool. I collect cool kitchen knives because they're inexpensive. And cool 8)

*The infamous Lee Harvey Oswald, the man charged with JFK’s murder also had connections to this book. In a raid of his Dallas apartment following the assassination, a copy of Catcher in the Rye was found.

Wish I could have been there! I've been scooping up all the good junk and best DVDs for about 2 years now. Speaking of, cue everyone's favorite Britney song. Because I did it again ::facepalm::
Big one is for scale.

We just do the Cutco - you know the drill, friends' college kid takes up selling them, now 20 years later we have a whole kitchen full of the stuff. ::facepalm::

Case Kitchen, no Cutco here


Coming from Bradford I never got into the Cutco knife’s. I’ve gathered quite a few kitchen knife’s in a unique circumstance. My family bought a house from a guy who had a large quantity of Case kitchen knife’s. I saved the cream of the crop when we were filling the dumpster. Others made their way into a bucket, which I later scavenged. (I saved them — otherwise they would have ended up in the dumpster.)

This one is one of my favorites. I’ve got other single kitchen knives and sets with wall mounts too.

Here is the set I found with a wall mount for easy storage in your kitchen. It has a Case logo on the top. I’m not sure if this was a factory set or aftermarket.

i bought one of these paring knives as a gift for my son-in-law(also a collector). i can't find much info on them or when they were made.

these have been my daily users for more than a decade. some are 100+ yrs old, and will outlast me.
L to R; Dexter, U.S. cutlery co., Wearever, Winchester, Dexter Harrington, Goodell, Ekco Flint, Comus(camillus), Goodell, Utica.
the honing steel is a newer Lamson Goodnow.
the wearever chef's knife is maybe the single greatest chunk of steel anybody ever put a handle on.
it's the first thing i'd save if my house was on fire.
