I would like to ask for advice on cheap, high-quality kitchen knives suitable for cutting cartilage. I give my dog cooked food and often need help cutting pork legs.

Welcome here, Vincer1986.
Here are some suggestions for you.
The cleaver on top is a Russell. High quality but not cheap.
Next is a 8" kitchen knife. You might like this size or search for a 10 or 12 inch model.
Next is a sturdy Chinese cleaver. Not expensive and decent quality.
Bottom is a no name inexpensive cleaver that can get the job done.

My favorite kitchen knife,
Dad gave me this Olsen filet knife we use it for everything. I filet the breast and thigh meat off pheasant. Then cut the pheasant or filet. As seen in the picture.
