McAlevy custom cleaver

Post by robpa »

My new cleaver by Matt McAlevy. Ironwood handle with burl maple and raindrop damascus blade. May will bring its chefs knife mate.

I bet that has a great feel in the hand and an even better chop.

My gr father owned a butcher shop. I worked there a couple days a week in the summer when school was out. I have limited experience with the Cleavers but used them some. my main job involved boning knives. He had a huge azz beef splitter(giant cleaver) on the wall which I never saw him use but did see them used at the slaughter houses. This little cleaver isnt for heavy use. I bought this one! I designed it and Matt made it. will likely use it more for slice and dice than cleaving. Im damn good with an axe tho.
