What are the different types of steel used in knife blades, and what are the advantages and disadvantages of each? How can we determine the best type of steel for our specific needs and preferences, whether we're looking for a blade that is durable, easy to sharpen, or resistant to corrosion?

That subject can be a real can of worms. Everyone (most at least) have a personal bias/favorite. There are pages and pages of information and opinions on the internet, giving pros and cons of various formulas of steel. For example: https://gearjunkie.com/knives/common-knife-blade-steels A good knife can’t be made from poor steel, but one thing many neglect to mention is heat treat and tempering. Proper tempering of a blade can improve good steel. Likewise improper tempering can ruin it.
For my opinion one of the best sources of information on the topic is the web site of custom knife maker Jay Fischer https://jayfisher.com/Blades.htm. There’s a lot there to read and learn so if you’re not seriously interested you’ll get bored quick.
