Looks like a butcher block of different colored woods. Really neat design and workmanship.

If you're a fan of that style you might want to take a look at www.etsy.com (safe link!)and search "NavajasArtesanales" which is the name of the store, and the knives are harlequins built by Juan Luis Vergara. He has some gorgeous knives!
