investmnt potential ??
Well I paid $20.00 to much on a Queens Peanut on E Bay that Bryan was selling. I guess for him that was a real good investment....
I may have to wait 20 years befor I can call it a good investment.
Or I can say I am happy to get his last one.
Try to look at any knife you buy as was it a good deal.
Then both the buyer and seller are happy.
That makes it a good DEAL.
Work on enjoying steel and scales and the people you meet more.
Come back to AAPK and read some old post.

All the knives you are asking about are good knife companies. IMO.

rudyboy welcome, I would say 1st Do your homework, which you are tryin to do. Then, decide what and why you want to collect that particular pattern or brand. It may be that you like the quality or you like the bolsters, scales or history behind said brand. All the brands you've mentioned are good quality over all. The Schatts are quality knives through and through. Never had a bad one. Bulldogs I tend to go for more of the 1st, 2nd and 3rd generations, made in the 90's because I just feel the quality was better then. Also, if you can find prototypes or first runs or low runs of a brand, they tend to be worth a little more down the road. Hen and Roosters I'm not too familiar with. Far as investment goes, older Case xx Tested and 10dot Rogersbone and the Case Classics sometimes bring a lot of money. But I would say collect what you like but do the work of researching 1st. Very important, ebay is no gauge of anything other than what a seller is willing to sell for and a buyer is willing to pay. Do not base your values on the bay. IMO.

Somone correct me if I'm wrong, but doesn't Frost sell hen and roosters and are the new ones made in China? I recently returned a Hen and Rooster that was advertised as Damascus - it was not. It had been etched in acid to create a Damascus effect. Faux Damascus
I do like older Bulldog knives and even here there is a lot to learn.

They are making many with bone handles that are also used on the Steel Warrior knives; but I have yet to see one marked anything but Germany. And you can tell by holding them where they were made. Boker and Olbertz are making most models I have seen lately. The better models (sowbellies specifically) are obvious Olbertz material; and many are obvious Boker productions. But I haven't come across any that were marked anything other than German.
So, I can't attest to the fact that none are made in China; but the vast majority are obvious Boker and Olbertz productions. I personally am not a big fan because of the multitude of composite handles they will make a single model with; just too hard for a collector to keep up.
So if you like Bulldog, you will also like most Eye Brand and a good many of the Hen & Rooster as they are made by the same hands. Bulldog is probably the most economical way to go.
If you like Boker, there will be some Hen & Roosters that strike your fancy and the now discontinued Henckels family. Henckels probably being the most economical Boker production currently.
