I have several pocket knives, some carbon steel, some stainless. How do I modify the blades for whittling?

Why not just buy a knife/knives made for this task?

Redhawk, I prefer the carbon steel but have one in stainless I use. I use various grades of sand paper to thin the bevel. I'm still learning though. There are several good videos on u tube that can help. Seems like to me that patience (which I am short of) is the key. Probably some of the carvers like mrwatch could add some insight.
