Can't help with any info on the age or maker of the knife, but I'd almost bet money it was used in butcher house. Seen a lot of knives with blades sharpened like that in my Father-in-laws packing house

I agree Phil. My father in law worked at Fisher's Meat Packing Plant in Louisville, Ky. and he had numerous boning knives that looked very similar to that one. They got sharpened several times per day on a steel and wore down pretty quickly under heavy use.
