Tagayasan wood on this Shun Kanso Santoku.

I'd never heard of Tagayasan wood before; here's what Google AI says about it:

The brass ring is definitely nicer than on an opinel. I don't know alot about the brand, I received this one in a trade, but I believe their baseline options have more common wood types like beech and oak.
