Tagayasan wood on this Shun Kanso Santoku.

I'd never heard of Tagayasan wood before; here's what Google AI says about it:

Tagayasan wood, also known as wenge or Senna siamea, is a durable, dark-grained wood prized for its strength and beauty. In Japan, it's sometimes referred to as "iron sword wood" due to its hardness and durability. Tagayasan is commonly used for knife handles, especially in Japanese knives, for its grip and durability. I like the knurled ring and wood on that one.
The brass ring is definitely nicer than on an opinel. I don't know alot about the brand, I received this one in a trade, but I believe their baseline options have more common wood types like beech and oak.
