I appreciate the chemistry lesson, makes sense. Would washing the knife with baking soda then oiling help neutralize the acidic effect? I would guess the process will continue until the handles are removed.
Is the Case badge glued to the handle or somehow attached to the liners? I am thinking removing the handles to stop the deterioration may be the best solution.

The shield (“badge” as you’re calling it) is most likely pinned through the liners. Open the blades and using a flashlight look into the blade well at the liner on the side where the shield is attached. Look carefully for signs of two flattened rivets/pins on the inside of the liner.
The covers will likely come apart in pieces anyway so you can carefully remove them leaving the pinned shield intact. If it’s not pinned they will come off easier though.
