It's called a bar shield and I believe initially it was used not only for decoration, but was functional for monogramming the knife.
I think it's a simple classic and for some reason it looks good with all the curves on a farmers jack.

As per Levine, you can date that c.1916-1919 when they stopped their German imports during WWI. I wonder who actually made it. There's some old posts on AAPK that mention Schatt and Morgan and a person named David Clark as a good source. (Before my time here.). Your scratch-out left enough of the shape to let me guess the mark. That tight circle isn't found on too many brands. She's a beauty, and rare. You sure do have 'em!

I'm pretty sure Utica made it, it's got their signature shield and a lot more of evidence I see on other Utica's .
