A Hen & Rooster Medium Congress with carbon & stag & an Ulster Swell Center Equal End Jack with carbon & ebony, I believe. Both were made in the early 1940s or before.

Thanks The backside is marked "Japan" so I am thinking it is an AUS 8 type steel. I think a lot Japanese stainless steel knives from that time period were AUS 8, if I recall correctly
