Those ribs sound real yummy, whatcha use for wood?
My mom likes cherry, makes for some tasty pork.
Mesquite is my go to for almost everything, the bag stuff is ok but I prefer to cut a few limbs from the wild and let them season for a while then chop them up to throw in the smoker. I do occasionally use apple for chicken and pork loin.

Not custom. I think GEC put these together for KSF. Then Bark River Knives convex ground the blades. The Scagel brand has been moved around a bit and I'm not an expert on the details. This particular knife is a Fruitport model.

I'm not entirely sure on the maker, unmarked, so likeliest chance would be Imperial, or related.
This is just a wild shot in the dark but, the Robeson EO I just bought is also stamped only with USA. Maybe Robeson? Maybe Charle knows the answer. He knew my EO at first sight.
