Thanks Ike, much appreciated. We love our bacon around here! We cure and smoke our own bellies; cure, cold smoke, and hot smoke our hams and also preserve our hind quarters for prosciutto. Here is a pastrami bacon I just did not too long ago,

Thanks! I enjoy carrying and using my knives, I would have little interest if I didn't. My Loveless and this Crowder have skinned some pigs.

Hey, thanks for that Pastrami Bacon pic! You should post a few more pics (somewhere, Outdoorsman thread?) of your curing processes, very interesting. Oh, and not to be overlooked, a couple more nice knives.

Thanks, I will do that, maybe the unoffical cookbook thread. Just starting to cure a ham in the next few days for Thanksgiving.

A pair of Bokers today, 140th anniversary integral in Chestnut and 440C from 2009 and a very well made lockback in book matched umbuia wood, stainless damascus and mokume gane. Stay warm folks!
