I know of knifemakers who make a knife using just files and it does take a long time.

NOT everyone does. He neither claims to make the knife nor purchase it.
I get my position from a knifemakers forum where I do get a lot of ideas for making knives. There are makers there from Brazil who use files and some who have grinders. Some use CNC, some frown on it and others accept it afterall, they did have to design the blade and then program the CNC. Some or most have forges others like myself do stock removal.
There are very few things set in concrete, don't purchase a blade and etch your name on it, BUT this is a site for Bladesmith's, those who make a blade from scratch or they make their own Damascus. I sure can't afford to do it all.
There are certainly other opinions and ideas as far as knifemaking goes. I have adopted the ideas put forth in that forum as far as knifemaking/Bladesmithing goes.
