Cattaraugus butcher knife

i picked this one up at a resale shop this weekend for 50 cents. it appears to be carbon steel. does it have any value? i only ask because if it doesn't, it will the converted into another type of knife. probably not, i just want to check with the experts before i go grinding on it.

any info is appreciated.

Probably only as a user - I had to pay 6 bucks for mine, just two months ago. The steel in mine isn't the greatest, either. One ham, and I gotta re-sharpen.

Couldn't tell from the pic - does that one have a bakelite handle ?

If it doesn't say stainless, I'm 99% sure it isn't, buddy.

hadn't thought about it from that angle. they do tend to plaster a blade with stainless when it is.

i'll post pics when done.

Yeah, I see all those scatches and yet no rust, no patina like carbon steel should have. Although they usually say stainless if they are.

I seen this one awhile back.
I have a few different styles with this style stamp and they look stainless, but are not stamped Stainless.
I do have an old carver with the same style stamp, but I am postive it is carbon steel because of the rust. I also have an older butcher's knife with a block stamp IIRC and it is carbon. I am doing an inventory now, so I will make sure on that.

it was raining all weekend here. I left the knife outside. If it is stainless, it's not very good at it's job of staining less. I believe this one is carbon steel.

I have a Catt that looks very much like yours that I used to carve the turkey............thin & sharp!
What is the handle on yours made out of or can you tell? Mine is some sort of brownish colored plastic.....I think.

Here is the finished product. I flipped the knife so the tang stamp is now on the tip on the back side.

maple burl, red fiber, brass sheet, leather, birdseye maple. The glue lines show a bit. I mixed black powder in the epoxy because i used it on top of the birdseye. The blade is so thin, i had to hide my bad blade fit with epoxy.

This blade is definately carbon steel. This is what it looks like after a few apples and slicing the Christmas roast.
