Here's one ya'll might find mildly interesting...

I traded for it, back when I was a pup, 'cause it was bright and shiny. (And it was small, so I could hide it from Momma). I had no idea what it was for, until Pop told me, years later. He had a good story about his Ag class learning to make capons outta roosters.

Both ahem, "blades" are stamped Ulster Knife Co. in three lines, it's pretty small stamping. The whole thing is only 2 1/2" closed.

Matter of fact, I may just start carryin' the durn thing again - it fits nicely in the watch pocket of overalls, and it's sharp - ooohwee !

This is a great thread, indeed! Here is mine, a Hibbard Spencer & Bartlett. There are a lot of old knifers who don't recognize this pattern.

First Seargent, that Challenge looks to be in very good shape ! They ARE neat little knives, aren't they ? Who made the "Stainless Handle" version ?

Yessir, Wildcat - their intended use is where they get their name. Ya see, down on the farm, you don't need but 1 rooster for every 10 hens or so...the more the merrier, as far as the rooster's concerned. When you caponize 'em, as pullets, they'll get a WHOLE lot bigger (which means more meat). The "process" involves using both blades on the knife, one to slice between the ribs, and the other to reach in and pull out the "objects"... doesn't hurt a bit, I promise.

The last one we caponized was back in about '73 - we named him Black Bart, and he was just as gentle as a puppy dog. He tasted good, too.

Anybody wanna go to KFC ?

The Stainless Handle one was a Kutmaster, Utica NY. Handle is longer than the other nutter knives I have seen. The blade is still pretty darn sharp still! Longer handle for better grip I suppose.
The Challenge I like alot! I was pretty happy when I got my hands on it! Real nice condition!

You can castrate a chicken???

we always just waited till they started getting mean and showing the signs of what sex they were. then went in the coop at night and grabbed the weaker ones while they slept.

yes, sure ,
in france (we are just a little wild) this kind of chicked is nammed "Chapon" and give extra tender and smooth meat

no, it's "chapon au champagne accompagné de petites pommes de terre"
(roasted chapon with champagne)

not completely off topic, the stockbreeders use small knife like this one to castrate chickens

I can see it all now....

The Bladesmith Society puts together a "Hammer-In", and sells video tapes of it.

The AAPK is gonna be at the next table, peddling "Basic Caponizing" tapes ! Produced by JR, starring First Sarge, and Paladin, written and directed by Hukk, translated by Stan and S-K. (You get to hold the rooster, Wildcat).

We might even sell it to Food Network !

You fellas are cracking me up.

Two things...first...wildcat...around northern Illinois there are a few Turkey Testicle Festivals every year, si yes, I guess you can eat them,

Second...I think if you color one of those Realtree Camo, slap a thumstud on it, and call it a "Caponator" or "Caponizer", you could make a fortune. Somebody's gotta need one?!? Right?!?
