I really like the Henckels line and particularly the 4Bl Stockman. They are made by Boker, but at a much more attractive price than the Boker Branded knives. The brand also went defunct with United, so I expect the supply will dry up before long now.

I believe the carbon blades are not marked whereas the stainless are. Another key is the shield. The stainless are black and the carbon are red. Many of the Boker are carbon steel.
