I can't tell much from there pics. Which would you recommend for an amber tone?

You are correct. It's almost impossible to tell what you're getting, just from Culpeppers pictures. I'm a huge fan of the random jigging and color on the Amber Catalina slabs from Culpeppers. Here are three knives that have been re-handled by two different knife mechanics using the Amber Catalina. Yes, they really are all different. What you get seems to depend on the handles you start with and the mechanic who does the work (how much he hafts them, how thin he gets them, how much he buffs them, etc). Personally, I'm very pleased with all three. Couldn't be happier. I even love that all three are different.

Edit: Are you doing the work yourself?
