Former Schrade President Walley Gardner and principal Joe Hufnagel joined with nine master cutlers to form a group of US craftsmen with over 300 years of combined knife making experience to create Canal Street Cutlery. It was first located in upstate New York where a long and rich tradition of quality knife making dates back to the 19th century. Unfortunately, the company closed its doors in 2015, but not before making some great knives. The brand was resurrected in 2018 as Canal Street Cutlery Co-Op & focused on making very small batches of high quality traditional knives. As a Co-Op, it was owned by the knife makers who worked there. Unfortunately, the business model couldn't hold up & the entity again ceased production.
The only one that I have and you do not have is the, Red Stag Whittler 312372RH
I do not have them by them self so I have to show it in a set of 2006 or 2005 set. I see I may have them turn around? Are the Red Stag year 2005 or 2006 ?
I am not sure if yours is an Amber Stag ? Your First Year is not the same as this one. YOURs is SPECEL Set Anniversary 2005.

I had seen a set like that for sale justold, and as stupid as I get about knives sometimes, I couldn't justify buying the whole set for one knife. Now I kinda wish I had. Those look fantastic. My 1st year is an amber stag.
orvet, that looks like a fine user. I'm sure you have seen the mother of pearl cannitler in the AG Russell catalog. I've been eyeballin' it a quite a bit.

dwygtd Quality Collectable Knives broke up one of those sets on ebay about 6 mo.s ago. Each knife brought a high price. He sold them that way and made more money than he was asking for the whole set.

I know it was Amber stag. Yours is from the First Set. I have that set also... But if you check it out you will see it is not the same as just a whittler with Amber. See the bolsters ? and you have the 2nd sheild. Yours is diffrent so you missing one...
Quick get a standard Amber stag whittler....
That way you will have them all but one......

First; the Red stag whittler is missing. I showed you what it looks like.
Second; is the Amber whittler you have. Comes in the First Anniversary set as shown in my photo with the stockman. Make a note bum your bolsters are not the same as a standard whittler. The extra shield is not standard. Yours is a special Amber whittler. This means you do not have the standard whittler showing here.
That is why I said go get a standard whittler.
Sorry if I do not use words well so you can understand what I am saying. I was just trying to help you with YOUR question in the first post.

Anyone know where I can find one like the last Whittler BUM posted? It looks like a Black Composite one.
BigDon has one in Ebony for sale...I don't think BUM's last one is Ebony..not sure.
I only have two Canal Streets......a ring opener that is exactly the same as Jonet's Carrier. I remember we got them at about the same time. And a Doc knife in a Red Mircata...really cool.
P&T, I think that's buffalo horn, not sure who's selling them though. I got one a couple of years ago, as an SFO, but I don't recall who it was that had them made.
