How should I store my knives to keep them as they are?
I currently have them with a light coating of 3 in 1 oil all over, rolled in a lightly oiled paper towel in a zip lock bag.
I know this may have been discussed before but I couldn't find it here.

One thing I can tell you, is, that paper towels are not a good thing to wrap knives in. Paper towels are made from an acidic paper. A little oil might make a difference, but a friend of mine has a prototype, Case Classic whittler that he wrapped in one and about a month later, he went to check it and the paper was stuck to the backspring. When he pulled it off there was deep pitting underneath. Of course, this was a dry paper towel, but I would recommend finding something acid-free to wrap your knives in.
Never put oil on celluloid handles. That seems to be a good way to start out-gassing and deterioration of the handles and possibly the blades. Put a small drop of oil on the pivot pins, then wipe off all the excess.
