What the Heck???????????????

Any ideas, pretty sure it should be used by a butcher. What do you think it is used for?
25 1/2' overall 15" blade.

I have a video of Tai Goo making, forging a knife and he uses a similar tool to scrape the edge of the newly forge knife blade. He says the Samurai also used it on their swords and that its an ancient multi-cultural tool of knife makers the world over.

My guess would be for taking flesh from a skin or a cheese knife. With it's large size I would lean toward a cheese knife for breaking down large blocks.

When I ran a cutlery store we sold them to a couple Pizza parlors for cutting pizza, even though they are really made for cutting wheels of cheese.

A little late here with a relevant post. As has been established, that is most definitely a cheese knife but what the heck is this? I think it's a pizza knife. Bought it from a local restaurant supply house for five bucks. The manufacturer is Dexter and the model number (S29113R) is stamped on the handle but their web site doesn't list that model number anymore. Got nothing off Google. So cheese knife? Pizza knife? General purpose, "get out of my kitchen and stay out" knife?

I think it is a cheese knife that has been converted to a Pizza palm knife. The different types or colors of wood seems to indicate a modification.

The different shades of wood are simply a result of my poor photography skills. I real life the wood is all the same. If you had the knife in your hands you would say, "Ahhh now I see. This knife was born this way."

The reason I say pizza knife is the length, unless it's meant for smaller wheels of cheese.

The thing that confuses me is the blade profile. The Pizza knifes seem to generally have a rounded edge so the knife can be quickly rocked through the pizza. (living in N. Illinois, I've seen a lot of pizza cut). The cheese knifes seem to generally have a straight edge.

Maybe I'll get a reply from Dexter and solve the mystery. Maybe they'll ignore me. Maybe I'll win Lotto tonight.

Better be cautious about gambling, my understanding is Obama is taxing lottery winnings at 133 percent. Could be true, Oregon just yesterday passed a couple of retroactive taxes one of which is a tax on business gross earnings. No profits needed just earnings.

I've seen commercial bakers use something like that to cut sheet cakes into uniform pieces. I've also seen them used to cut hand made soap into palm sized bars.

The mystery is solved. I received a reply from Dexter today.

Jerry,

Actually it is a knife designed for cutting blocks of ice cream, although it has been used for pizza. The knife often broke when used for cheese.
It was discontinued about the year 2000 because ice cream is no longer processed the way it used to be.
