Post by justold52 »

VG-10 stainless steel is clad with 16 layers of SUS410 high-carbon steel on each side, producing a 33-layer rust-free Damascus look VG-10 "super steel" is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium Shun Classics feature Ebony-black PakkaWood handles specifically designed for premium applications Stainless-steel bolsters and end caps Dishwasher safe NSF Certified

This makes me wounder if this is so good how many of you AAPKrs have and use such a knife?

Damascus steel not rust ez?

What does Damascus look mean ?

I have a good selection of the Kai-Shun knives. They are a hightech material san-mai(three layer construction-high carbon center steel, low or medium steel slabs on the outside) not Damascus but folded steel--in this case stainless. They hold an edge real well and can be hard to sharpen unless you use some of the modern ceramic waterstones(the ceramic rods are good for a touch up)Price wise ok,about what ive seen them on "sale" for

I have 3 that I use all the time, paring, large chopper and a slicer 6". They hold an edge and feel great in your hand. They do all the work and would use nothing else. They are costly but man are they great knives!!!
