Best way to put on a convex edge?
So a few of my knives have convex edges (Chris Reeve Folders and my two fixed blade Fallkniven NL series). I am wondering about the best method for keeping the convex edge on them when I sharpen. Would using the TSPROF system with the convex edge adapter be better than say the Work Sharp Ken Onion with Grinder attachment? I have the Work Sharp/Grinder system and it’s great and quick but it can take off a lot of metal quickly if you’re not careful. And with longer blades, I don’t know I’d be that great at keeping a consistent edge bevel which is why a more precision system like the TSPROF seems like a good option. Or maybe just learning how to do it freehand on whetstones?

I do not recommend the Ken Onion Work Sharp Grinder for exactly the reason you cited. It can remove a lot of metal in a hurry. (I have one BTW, but it’s use is limited to mower blades and machetes etc.). JMO.
I am however an advocate of the Work Sharp Guided Sharpening System. It’s not expensive, it combines the best of guided and freehand sharpening, and its diamond plates completely changed my perception of modern stainless steel blades. It has angle guides, but their use is optional. If you don’t like the angles that come with the base kit you can buy others from Work Sharp’s web site. Best of all it doesn’t use any #&*$@ clamps. Its diamond plates are large enough for use with fixed blades and other large (longer) blades. Here’s a link to my review of it. viewtopic.php?t=66841

I have heard of people using sandpaper on top of a mouse pad to maintain a convex edge but I have never tried it myself.
The mouse pad has a little bit of “give” which allows you to maintain the slightly rounded bevel of a convex edge.
I don’t have any experience with the sharpeners that you mentioned.

I don't know about the best way, probably everyone has their own way. This video helped me at one point. It's in Russian, but the way he sharpens is quite clear. In the video he is 78 in 2006. In 2007 he passed away due to an unsuccessful heart operation
