when did sheffield start making folding knives ??

A quick look in Tweedale's Directory of Sheffield's Cutlery Manufacturers shows they were making cutlery as early as 1297.
They show a folder made in 1679.
Better research might get better information.

Sheffield didn't make knives. Knives were made IN Sheffield.
They were made by many cutlers.

Right, Sheffield is the name of a city in England. Knives made there in the distant past used an alloy of steel and a particular heat treatment that was referred to as Sheffield steel. As stated, many different manufacturers in the Sheffield England area made knives using "Sheffield steel". All this has been adulterated by modern manufacturers and companies from China mostly marking their blades "Sheffield".
