Mystery knife 1873 stamped sterling 27

This is the mystery knife signed on the master blade frontside (sterling)... backside (27)...This knife is a fruit knife; the knife handles are signed by the orginal owner ( A.Page) frontside.... (1873) on backside ....
The story is that the orginal owner was a bank teller and could have had the knife custom made but everthing has a story....
Since the blade isn't stamped I'm curious what companies made those knives back in 1873 and what does the number 27 means..
What pattern is on the knife ect....Any and all information wecome!!

The 27 could either be a pattern # or an assembly #. I have seen French knives that can be taken apart with #'s stamped on blade tangs & liners. These were likely used in manufacture. Also on medical equipment that is taken apart for sterilization.
As there are no hallmarks,it is likely American made.
