Have a look at Tramontina. Very good price wise, take a good edge and easy to sharpen, i dont know if they come in sets but that may allow you to make up your own set. Correction, just looked them up, they have a new release of 6 knives called the Churrasco Black label set, should be about $200US. I have 2 high carbon stain - free kitchen knives which are really good quality, and have only seen good reports online about them.

Dexter Russel Sani Safe knives. They are inexpensive get very sharp and can go in the dishwasher. They are almost indestructible.

I have one of the net knives I carry for cutting baler twine and other stuff hard on edges, and it's proven just that. I chipped one serration, but that's due to accidentally striking a steel bale feeder.

I currently have a built-up set of pricey Henckels (though all four have cost me less than one; due to buying them from closeout stores); but am planning on switching to Sani-Safe.

I've had Shun for over 20 years and am totally satisfied. Razor sharp outta the box and Shun offers free sharpening. Just my opinion. YMMV (your mileage may vary)

Victorinox/Forschner block sets can run in the $200-$300 range and I think you get a lot of bang for the buck with these knives.
If I have seen further it is by standing on the shoulders of giants.

Get the Victorinox.
In the real world they will absolutely do the job as well or better than much more expensive knives.
They are available individually or in sets, with Fibrox handles that are dishwasher safe, or with snazzy wooden ones at higher prices.
If you want knives that will CUT, get them. If you want knives to admire, and to discuss steel types etc., well there are lots out there that work for that.

Go on Ebay and look for Robeson Frozen Heat cutlery sets

They cannot be beat and will cost you nowhere near what a new set will cost.

Haven’t been made since 1965, but unused sets show up on Ebay all the time.

Just avoid the German imports.
