Jeffrey, the scales on the Queen steak knives are Winterbottom bone. I have a set of eight and really like using them. They take a great edge and look really nice on the table.

Nice looking queens. Here is my only kitchen set. A perfect wood handled Case XX set. (Up for trade by the way) Let me know if anyones interested.
