The French in the Harlequin scheme by Perceval
Didn't know that maker before but they seem to make really quality stuff
Received it from Texas from Knives of France
The finish is flawless, linerlock, more on the larger size but really slick design and I love the inlay style handle

Looks like a butcher block of different colored woods. Really neat design and workmanship.

That is one beautiful knife you have there Juls!
If you're a fan of that style you might want to take a look at
www.etsy.com (safe link!)and search "NavajasArtesanales" which is the name of the store, and the knives are harlequins built by Juan Luis Vergara. He has some gorgeous knives!

It's a mix of different woods (don't know exactly which ones)
