Maybe someone else will have more to add, but here is what I could find.
I have never personally seen this stamping...the only reference I was able to find was in Goins' Encyclopedia of Cutlery Markings. He states that the Rex Cutlery Corporation was located at 24 Cordier St., Irvington, New Jersey. A Kurt Schlesinger was the president, and they dealt mainly in scissors, around 1945-46.
MY CONJECTURE would be...
Since the knife is marked Germany (a U.S. law for imports after 1891), Rex was probably one of many importers of German cutlery, rather than a maker of knives.
No joy, as it were, on the JOY marking...
maybe an inhouse brand used by Rex Cutlery??? Is that marking on the smaller pen blade different??

It is the busier of his two forums, and since he didn't list the marking in his thorough book, he might take a particular interest in your knife.
For best results, include the length of the knife when
closed, try to resize your pictures down just a bit. He can be a, well, crabby sometimes...but he is probably the best at knife identification. He doesn't give free apraisals, as that is his line of work. However he may tell you if it is worth your money to have one done.
