The wife and I did some hiking on the Indian Head Rail Trail yesterday. We were supposed to bike the 13 miles each way, but my double flat tires with only one spare tube put a damper on that. It was a gorgeous day, lots of Fall colors on the trees and even spied some does drinking.

1967redrider, looks lie y'all have some beautiful country to ride through! The flat tire issue doesn't sound too good. I saw the venison sausage on the hoof in a couple of pics.
Speaking of venison sausage, I'm trying to finish up last year's trimming that have been resting in the shop freezer. Miss Joy bought a 2-pack of Boston Butts last week, she cooked one and I claimed the smaller one to make a batch of venison/pork sausage. It weighed 10 pounds; I thawed out 15 pounds of venison and made up a batch of sausage today. The seasoning we use is packaged for a 25-pound batch, worked out great. The bulk sausage is now resting in vacuum sealed 2 pound+/- bags in the freezer in the utility room.

The process of making our sausage begins at the time of processing the deer carcass, the shoulders, the neck and rib meat are carefully trimmed and cut into small pieces, weighed and frozen to be used at a later date. This mixture makes a great burger, it's used in sauces for pasta, chilis, etc. 24 days after today, rifle season starts in our part of the Panhandle!

The sausage making photos bring back some good memories. I rigged up the largest grinder I could buy with an electric motor and the rest is history, as they say. We made our sausage just nearly the same as you do. Our favorite seasoning was Leggs. I no longer hunt as all my hunting buddies but one have gone on ahead. I let the grinder go at the last garage sale. Still have my rifle and a heavy coat if needed.

We too use Leggs seasonings. My dear old Father-in-law used Leggs exclusively at his business. He told me the Blend #10 works on any meat as it is advertised as a pork sausage seasoning. The last couple of seasons I have also used the Leggs Summer Sausage seasoning with good results. We sometimes enhance the seasoning a bit with additional sage and cayenne. I miss doing the link sausage and smoking them, but it adds a lot of work and the bulk is more practical for our home cooking.
My grinder is a #32 hand operated from Northern tool. The hand crank was replaced with a large pully and there is a reduction jack shaft in the link back to the electric motor. Took a bit of calculation to get the thing to run at about 80 rpms. We built the table from oak with casters, and I just wheel it into the kitchen and go to work.
Keep that rifle handy!

Today was a Holiday in Bayern. All Saints' Day. Normally a day to visit the cemetery. I figured I'll get there soon enough so we took a walk through the fields instead. We had beautiful Sunny weather as you can see by the pictures. Hope you enjoy. As always, too many pictures.

You know how dogs are John, they love every min. of it. That's the main reason we walk so much. And that's why we should always have dogs around, to keep us up & moving.

Another thing I have noticed, it's a good thing when I take my tablet along for taking pictures & try to capture the beauty of the surroundings. It makes you stop & look at the roses so to speak. Which is in some ways biblical IMO. The good book says we should be like a child & children are still taken in by God's wonders. This applies especially to outdoor knife pictures IMO. If you look through all the threads with outdoor knife pictures involved in them & you look at the places where knives are placed for taking pictures of them, it's often places we would overlook. Holes in trees. On top of mushrooms. And so on. We are more inclined to see the beauty of things when we are looking for them on purpose. And these outdoor pictures have also inproved my own personal opinion of the area I live in as well.

Ok, gotta run off to work now. (Guess I need to take some pictures of where I work too.)

I agree. When there is a thunderstorm at night the thunder rolls across from the west to my house in a way I never heard as a child. It gives me a feeling of reverence seeing the flashes and hearing the thunder and knowing how small I am, but somehow God, with all his power and glory knows me and sent his son to save me!! The Baptist hymn “How Great Thou Art” always resounds in my head.

Hope y'all don't get tired of seeing deer pictures and stuff around Starvation Plantation.

Each week we get literally hundreds of pictures, sometimes several thousand and there are all sort of critters showing up at all hours of the day or night. Sometimes there is a glimpse of a tractor going by or some trespassers rambling around where they don't belong, birds, squirrels, rabbits and stray dogs as well as coyotes and deer.

There was an interesting set of pictures that showed up this week, on Halloween morning a coyote is seen moving on a trail adjacent to some very thick woods. The camera at that spot is set to take 3 shots. The odd thing is that about 30 minutes later a small deer is seen running the same direction on the same trail. What struck me as odd was this scene should have been reversed.

The old standby camera at the feeder got a shot of a young deer about to lose its' spots, they are fading, are almost gone.

Look at me, I'm getting my winter coat!
