Whatever you do, don't search for "gaff" in a search engine. First thing that comes up is underwear for men of a certain, ahem, "alternative lifestyle".

Well of course I had to search it up after being told not to! Lol. Thanks for adding that nugget to the conversation - it really throws an ominous tone on the term ‘gaff knife.’

Here's an Ulster stabber jack. 3 5/8 closed. The last one is with a Conn. Cutlery stabber jack.

And here's a 3-1/2” celluloid Ulster cattle salesman's knife. Number MK 35UK on back side. It's from a display board that was part of the Schrade factory collection.

I like Stabber Jacks ! The full saber grind makes for a more interesting knife. The Cattle knife is more recent than the jacks. Do you think Schrade-Walden might have made this Cattle knife ?

Thanks Roland. More like Schrade/Ulster in Ellenville since it does look like a newer knife. Only the main blade is stamped, hardly any swedges, etc.
I do have an Ellenville Knife Co. cattle knife that I'll post at some point.

Here is a 2 5/8" Ulster Knife Co. 3 blade senator. Very sweet knife, at least 80 years old. Senator is my favorite pattern.

Roland, I'm far from being the Ulster king since I can count my entire Ulster collection on one hand. I do enjoy your posts, the questions you ask and the pictures of the knives in your collection. I wish I could handle half as many as you have.

Mike... would really like to see your Ellenville Knife Co. cattle knife. I have not come across that one before...

Here's an 80 to 90 year old Dwight Devine & Sons' Ulster equal end cattle knife with MoP handles I just picked up at an antique show at the Warren County, NJ fairgrounds at the end of last month. The dealer had a bunch of pocket knives in a box & I picked out 3 (including this one with a sticker price of $12). She said she would take $20 for all three. The other two were a Kingston & a Wardlow Cutlery / Walden... but I've been carrying this on around in my pocket ever since... as it still has a great edge to all 3 blades

Its stamped with the pattern №. 33487 on the pile side of the main blade.
