I like both so long as they have good heat treatment - but I am not keen on things like 440A for example which are too sot to sharpen. And I think the worries ae old ones related to earlier steels. Good modern stainless is just as good as good modern carbon

i am with pen & toothpick. carbon for using and stainless for collecting. but. i like carbon better.

Carbon for the most part but I have a SOG in VG-10 stainless that is hard to beat.

I voted carbon because most of my slipjoints are either 1095 or CV, but I am very partial to D2 as well which from what I understand isn't classified as stainless, but pretty close due to the chromium content.

I live on a very humid Island surrounded by salt water so I carry stainless blades. In my opinion the newer stainles steels are incredibly tough and really hold an edge. I carry one in S30V and another in 13C26. The S30V does hold an edge a bit better but both are great. In the kitchen I recently put Jade onto a VG10/Damacus clad, small Chef knife and both my wife and I have both started using it for about everything as it just cuts and cuts and cuts. Talk about holding an edge - try a VG10 blade. Wow....
