Best Knife Sharpener, Expert Advice to Choose

I personally would not go near the Horl rolling sharpener. Have a look at at the Idahone V ceramic sharpener, has 2 grits and 15 and 22 degree angles. Excellent for kitchen knives. They have some instruction videos on their website. And a lot cheaper than an electric sharpener. I personally would not be getting sharpening advise from cooking/food websites. Have a look at some of the sharpening clips on Youtube, some very experienced people there. ::handshake::

I have used the same Lansky since 1981, although the original stones have been replaced with diamond ones. The rap against the Lansky is that it not handle very small or very large blades, which is true. But for most pocketknives it works great by holding the angle perfectly to give the very uniform sharpened line on the edge.

Well, I'll kick off with, I love my Worksharp Professional Precision Adjust. With a little finesse, I get extremely fine edges on everything from 440c through M398.
I'm not afraid to put a razor edge on collectibles either.
I think a few of my GEC purchases were the dullest knives I have ever bought new.
I even use it on my Shirogorov and Herman knives with confidence.
The most common comment I get on my knives is "Jesus Christ , it's sharp".

Seen many good reports about those. Can you only use proprietary stones. ???

Hey Cudgee,

I use the Intelitopia Knife Sharpening Stone that costs about $30, and I would say it's worth it. It comes with 4 grit levels across 2 double-sided stones, and I'm pretty happy with it so far. I've even mentioned how I use it on my personal site
