Best Knife for Butchering? Seeking Expert Advice

I'm looking for recommendations on a solid butchering knife — something reliable for breaking down large cuts or whole carcasses. I’m torn between going budget or investing in a premium blade, and I’m still weighing the pros and cons of Japanese vs German steel for this kind of work.

If you’ve got a go-to knife for processing meat, I’d love to hear what you use and why you trust it. Brand suggestions, blade shapes, steel types — anything that helps narrow the search would be appreciated.

As a professional butcher I broke primals down, never a whole carcass. I used two knives all day. An 8 inch cimeter "breaker" knife, and a 5 inch semi-flex deboning knife. Forschner/Victorinox brand with their fibrox handle, which provided excellent grip.

I can second the Forschner/Victorinox.
I used to work as a meat cutter over 36 years ago, and I still own the Forschner butcher knife that I used.

This ^^^^^^^

Forschner is some of the best knives out there to get done what you want done. Back during my high school daze, I worked at my small town packing plant that had a kill floor, hanging cooler, cutting room, etc., etc. We 15 of us employees used Forschner blades to break down quarters to process the entire beef.

Can't go wrong with this brand.

I use Dexter Russel SaniSafe knives.
