Looking good, I’m excited to see that wood with finish on it. Are you going to use an oil like Tung or linseed or a paste wax of some sort? Any stain or natural?

It's shaping up beautifully.

Assembly and peening is done and final sanding is next. These pics are against a bamboo cutting board, so the wood isn't really jumping out like it does in your hand. I will probably finish the wood in mineral oil, followed a few days later with mink oil paste for full water proofing.

time with the sander is over. deciding on finish, stain or straight mineral oil (maybe I'll stain a piece of scrap cherry to see). then mink oil paste to waterproof it.

Looks great, but I'm one who likes a darker wood.
Can't wait to see it finished, however you do it.
