hi. I stumbled upon an old knife marked “holt” and “1906” on another side.

Looks very vintage and I’m curious about it. Is it a kitchen knife? Hunting knife? Sacrificial knife?

I'd say you're on the right track with your thinking on kitchen knife.

Looks like a table knife from a set of tableware. You might find help from one of the companies whose business is buying and selling tableware, like
https://www.replacements.com/silver_den ... f2112d7e6c. You can find other companies having online sites. It’s probably not Sterling, else it would be marked as such somewhere, but it could be silver plated. One of our members more knowledgeable about such things may have more.
