Hello. I came across this Remington shield on a stockman style knife. I can't find any history or images of this shield for Remington. Assuming it is a fake?

It would be helpful to see a photo or two of the entire knife that is in question. Based on what I see, I suspect you've got a modern-day Remington reproduction. Without seeing the entire knife, that's just a semi-educated guess though.

I think it's a Chinese Remington.
*Edit- pardon me overlooking this,

The original Remington Cutlery, owned and operated by the same company that manufactured Remington firearms, was in operation during the 1920s and 1930s. That company introduced the Remington Bullet knives. That company was sold in 1939 to Pal Blade Corporation. Those are the original Remington knives. Pal ceased use of the Remington name at that time.
Since that time reproduction Remington Bullet (and other patterns stamped with the Remington name) have been made under licenses, from whoever owned the Remington name at the time. The earliest of these I’m aware of were made by Camillus beginning in the early 1980s. Several different companies have made authorized reproduction knives since then.
There have also been counterfeits made. Most of those are fakes of the original, pre-1940 knives.
Without pictures of the entire knife it’s hard to say whether your knife is an authorized reproduction, or a fake. One can tell a lot from the knife’s materials and construction, but very little from its stamps. I agree from what I see it looks like it could be from China. The Chicoms will counterfeit anything, but they also make authorized reproductions. It’s certainly not an old original Remington.

Definitely not fake. That shield has been used on some modern knives.
