I have a question, which German brands have flick springs that press into place like the Hubertus knives vs those that are fixed and built as part of the Main Spring?

to AAPK, XBMX! I'm not aware of any other German knives that have press-in springs besides Hubertus, but the Czech Mikov and AGA Campolin Zero and Zero+ models all use hook-in/press-in easily replaceable springs.

Thinking of Bonsa-Winger-Boker-Svoboda-Weidman ect. Mikov's design is brilliant, so easy.

I failed to think of all those brands, but even if I hadn't I'm unaware of what type springs they use. I recently saw a Bonsa manual swinguard that "I just gotta have", but I'm sure they're like "hen's teeth" to find!

All of the German springers have springs that are separate from the backspring.
Only later Hubertus knives have springs that are designed to slip into place. And, they also slip OUT of place and can break the backspring.
You will see some "German" brands that have an integral back/kick spring- but those knives are actually made in Italy.

I would then assume that they are either dovetailed or pined.

They are slightly dovetailed.
