All About Pocket Knives

I have a Eureka Jack with bone handles.
One side is turning dark while the other side stays the shade it came with.
How do I get the side turning dark to fade back lighter?

My question is why is it turning dark? That's not going to happen just by itself. There has to be a reason. That being said, I'll tell you what I did. Keep in mind this is probably a dumb idea but it worked for me.

I laid the knife down in the Sun with the darker side facing up, and after a few days, it was lighter in color as it had faded. To keep that side from drying out I put generous amounts of Mineral Oil on it. My knife came that way but your's sounds like it's doing this all on it's own.

Like I said, probably a dumb idea but it worked.

It is not uncommon for older knives to have bone handles that do not match in color. The factory employees were making knives to be used. They paid attention to fit, finish and function but not so much to handle color.
Post pictures showing us both sides. Maybe your knife left the factory with handle colors just as they are now.
