ULSTER over KNIFE USA tang stamp difference...

Howdy friends,
Just wanted to see if I could get some clarification on an old Ulster knife that I acquired.
From my research, ULSTER over KNIFE USA is post 1941, but my main question is, when exactly did it go to just Ulster over U.S.A ? What year or years did it change? On my knife the
Ulster is also in script on the badge....

Oh, forgot to say there is a 40 on the reverse side as well

I don't know the exact answer, but that looks like a 1960's knife to me based on the handles

Does not look like bone to me from the pictures. Here’s how you can tell for sure

Thank you Ken, still learning and I've probably asked the same prior on a couple of other knives....
My original thought was the Bonite material based on the research, but it was wishful thinking
I'll probably invest in one of them thingamajiggers one day
