All About Pocket Knives

I have an elderly friend who has asked me about a knife. Unfortunately I don't have a picture but he described the knife as being found in the walls of a house he was tearing down that was built in 1902. The knife has yellow scales with a shield that pictures 2 "coon dogs" baying up a tree. The only other markings on it are on the tang where it says Made in USA.

Any ideas?
