All About Pocket Knives

I recently picked up a slicing knife that was made in France. I can't determin the maker with the weak stamp.
Is anyone familiar with this stamp.
The bottom knife is the slicer.

Another nice French stamp. Sanson A. Beziers
Knife is 7.5" and blade is 3".
Ebony handle.
Carbon blade.

Seller said you could shave a mans face with it.
I don't think you could shave a carrot with it.

It's one sweet little knife though.

I think the reason it isn't sharp is that it is a knife for opening clam shells.Here is a Henckels model with a slightly shorter blade.I have a set of 6 of these.

Actually it is a paring knife or tournier. It's quite old which is all the more troubling when the seller, who seems to know quite a bit about kitchen cutlery, had it ground "sharp" for his customer. He does this with other old knives too. I wish he would leave them alone.
I sharpened it on my stones and it's a real kitchen pal now.

Very unusual shape for a parer;most of the ones I've seen have a clip blade or a reverse hook similar to a champagne cutter.
Here are several of mine and the pride od mine collection: A Warther parer(with the engine turned blade)bought for 50 cents at a yard sale.

I can see how mine is a bit wide for a parer, but I don't know what else to call it.

I got another one in. It's really nice. Apparently it's German made. It's 8 1/4" with a 4" blade. Nicely tapered tang with ebony covers.
It gets quite sharp as these old finely tapered blades will do.
