All About Pocket Knives

Found this in a small private cemetery near our home, carved granite, feels un-polished. There is an old quarry nearby, so I am thinking it may have been done local. Not sure if the guy was a blacksmith or a farmer. I am going to check and see I can find out, he is the only one with that last name. Our family has been here since the late 1700's, so there should be a record at the church.
It is about 30 inches in lenght and 18-20 inches tall.
DOD was 1904, most folks in this area had a certain trade or moved on.

Interesting that his name was REST. Is that irony?

After a closer look, I see I jumped the gun and didn't look close enough. The best I can make out, his name was 'E.A. Presnell'. I may have the first and/or the fifth letter incorrect in that last name (it may actually be 'Fresnell') but the rest are pretty clear.
