Here's a fantastic tutorial on basically what you want to do, just replace the handles.

To answer your question though, technically, the scale "rivets" are indeed rivets, in the simple sense. They are pins which are flattened out one either end with a hammer (or press, in factory knives) to form something like an "I" shape (if the font had the bars on the top and bottom

). If you grind off the heads of the pins, you should be able to remove the scales rather easily. then just follow the steps in the link above, and be sure to show us the finished product!

Take some photos of before and after of your knife.
It is even nice to see some steps in-between too.
Many of use never get to see the guts of a knife.

I have never seen kangaroo bone handles on anything. Is that something I've missed?
I, for one, would love to see some examples of kangaroo, so please show us what you do like Justold52 suggested. And if you have any other examples of kangaroo bone, I'd sure enjoy seeing them too.
