Both? I am leaning towards gunstock because the swell in the center seems asymmetrical and it appears to be wider on the barehead side of the protrusion than the bolstered side, but usually the spring side of a gunstock is flat or at least doesn't have that bump. It's almost like a hybrid of the two... A bottlestock if you will.

I'd call that a gunstock.

IF my research is correct, this “Made in USA” knife is pre 1944 because of the can opener style and wartime because of the lack of brass liners. Any information gratefully received.

I cannot recall seeing "Ellenville" on an Ulster Knife Co. tang. I think it is from very early Ulster days and rather rare. The New York Knife Co is a gunstock pattern as others have also stated. Looks to have a slightly short master blade ?

Thanks guys, I appreciate the help on them..I was looking at the blade wear on them and there definitely is some..what I did notice is how the springs are very different from some other knives I have..it seems like they wrap around further than most and have very strong slants inside the runners..I try to look at the swedges when I purchase them, but you know Ebay is a " squint and squeeze "..but, check out the springs on these things..I should have put it in the first pictures and when I was telling my pops about it, he thought I should show you guys on here and maybe someone would know the age of the Ulster..the ulster is left and the nyk right, thanks ~Jon

j really nice knives, I would say Gun Stock for sure. Love the springs, I don't know what they are called. I refer to them as wrap around like you do.

North Star Blade Collectors finds of the month. The pearl is a Simmons Keen Kutter and the two celluloids are a Waterfall and a purple swirl H.Sears and son. All three have excellent snap and crack free scales and near full blades. ____Dave

Dave, I like the old yeller lookin' one with the punch. Then I noticed it says PUNCH KNIFE on the handle.

I got a tiny Richards and a great big - something!

The Richards is a mate for the little one I have. At first, I thought I had a double, but then I realized that the slightly more worn one has a carbon steel blade and the other is stainless. The stainless blade is a hair bigger too.

I have no idea what the big one is. It screams ‘OLD’. The blade is carbon. It’s wicked sharp, at least. Very serviceable.
The seller thought it might be home made, but I don’t think so. It has what looks like a professional nail nick and the handle shape isn’t as simple as I’d expect on something home made. There are no markings. Any ideas?

True. It seems to be a Mercator, but there are some differences. It’s quite pitted and does seem to be old.

A shame about that Rogers bone on the Imperial cattle knife. Maybe someone here can bring it back to life...

Nice finds zoogirl, dj, Scott and Jporter. I fooled around and got behind on reading. Thanks dogleg. Tsar that sure looks like the same bone. Treefarmer that 6265 will outlast both of us and still be able to get the job done.

Check your question under General Knife Discussion on this knife and you will see at least 3 other examples of the same knife BUT different makers ... I am guessing earlier 1900s...

I've got a couple Allen's with the folded steel sides that, I believe are really close to this. I'm not sure where I stashed them at the moment.____Dave

Went to my favorite antique shop today and while talking to one of the vendors there she gifted me with these five kitchen knives.I promptly gave her five pennies and told her of the tradition of,"give a knife;get a penny". She also has a Wabash Cutlery Co. picture handle tuxedo in excellent condition that we are trying to come together on a price.
Anyway one of the knives is part of the steak knife set she gave me about a year ago that was a wedding present for her and her husband(sadly deceased now)51 years ago.Two others are interesting:a Remington K4807 butcher knife with a hammered finish on the blade and a Hollinger Hand Made Fremont O. butcher knife. The other two are well sharpened boning knives with no markings.The odd thing about all the knives is the blade finish:All have a brownish coloration that almost appears to be corrosion covered with a semi gloss glaze. I don't think it was sprayed on or dipped but apparently occurred naturally. Maybe exposed to some type of chemical.
The other knife is a paring knife stamped Stainless Steel Pat. # 1,967,472 and an emblem inset into the smooth black composition handle saying,"Dunlap approved Western Made" Cost me $2.

knife7knut, you have some of everything and all of it super interesting.
Cleaning out stuff and ran across this old letter opener from days in Cleveland Oh. It is really a substantial piece of metal. It is about 8 in long.
