The first three knives are by the Bulgarian master blacksmith Petar Genov. The second one is modeled on a traditional Japanese hunting knife. Damascus blade with handle made of pieces of bamboo.

The top knife looks to me like a yatagan*

That is one good look blade!
*The yatagan, yataghan or ataghan (from Turkish yatağan), also called varsak, is a type of Ottoman knife or short saber used from the mid-16th to late 19th century. The yatagan was extensively used in Ottoman Turkey and in
areas under immediate Ottoman influence, such as the
Balkans and the Caucasus.

This is a Bulgarian shepherd's knife, widely used in the Balkan lands in the past. For a long time there has been a debate whether the model originates from the yatagan or on the contrary - the shape of the yatagan comes from the Bulgarian shepherd's knife.
The fact is that the yatagan entered the Ottoman Empire as an unofficial weapon of the Janissaries, and they, in turn, were entirely recruited from the peoples conquered by the Ottomans, mainly Bulgarians, but also Caucasians and Armenians. It was called a blood tax and they chose the most beautiful and healthy children.
Either way, the consensus is that the shape comes from the Thracian kopis.

Yes, that all sounds reasonable

I have read many books on the Ottoman empire and I have been to Turkey twice and visited the museum of the army both times and there is so much stuff there you could spend days walking around there. I also plan to go to Bulgaria someday as I collect axes and I am on the hunt for some hand forged Bulgarian axes. I want to get a few while visiting your country.

Here is a fixed blade ZT 0100. CPM3V steel, full tang, 0.192 inch thick. Aluminum scales. There used to be several YouTube vids showing this knife being used for all types of outdoor survival tasks.

Rx3, I had one of these years ago and I loved it, it is a great knife, a very good design, great steel, fits the hand well. I think it might be discontinued...
